I made soup today. I know, I know, what is so special about that my long lost readers ask. Its in the story. Fasten your seatbelts as we wander off into the tale.
I did not make a turkey dinner for Christmas, I was lovingly invited to a couple’s home with whom I am bubbling. ( A covid term currently in vogue) A feast fit for a queen. We ate and had 34 desserts and I rolled home after looking at the lights in the city. (Except for the middle of city of Riverview which had a power outage)
So not cooking a turkey meant no bones……..to make soup. BUT fearless readers, fear not! ……..(is that a double negative?) I have friends who don’t like soups of any sort. Thus I called them the day after the big event, so as not to appear pushy about their bones. I was assured when they finished with the carcass it would be mine! Days went by and not a peep.
In the meantime, I impulse purchased my way thru Giant Tiger for a New Years Feast. My fridge already full of Christmas festivities. In I went the masked warrior, and bought frozen ribs and drumsticks, some pasta and sauce, and other non caloric items, oranges, yogurt and the like. Batteries of the AAA variety if my mind recalls well.
I rec’d a phone call from the local area code……..and it was my friends who had not one, but two bbq chickens. They were apologizing as they had in fact thrown the bones away and offered me whole chickens in good stead.
I took them and hurried up the stairs leading to my abode and ate some of them for dinner, they arriving just in time. Thus I had the makings of soup and lots of it.
Today was not bright and sunny but I was, earning my gold star for working out, meditating and purchasing a workout ball (on sale!) Arriving home, I opened the fridge door and the magic happened.!
Recipe
I installed the half eaten bird in the pot with garlic bullion.
Boiled it for the 30 minute workout class.
Chopped up celery, onion, and cabbage put in another pot.
Adding to that, was frozen corn, string beans and a container of fresh spinach.
I poured the liquid from one pot onto the vegetables and let the chicken cool and put it all into one pot.
Not enough liquid so added two dollar store bullion cubes in a liter of hot water added that to the pot. Then rummaged thru the spices I have and added two bay leaves just in case.
The piece du resistance? Tortellini (on sale!) cooked in separate pot added to the bowl with the “soup” on top. WONDERFUL, the first yum of the season. OFF we go into 2021…….come with!
